Chocolate pudding! Invented sometime in the 1800s, it’s one of the world’s greatest culinary creations. Originally made with milk, eggs, and sugar, chocolate pudding has undergone several transformations over the centuries. As you know, almost every recipe I create is vegan, gluten-free, and often sugar-free with a focus on good health and this one is no different. “Blech!” you might think at first, but don’t knock it til you try it… (It’s seriously GOOD!)
Yours will probably turn out slightly different to mine. My coconut milk is made from scratch, using local coconuts. The cacao paste comes from a farm up in the hills above the village. The bananas are grown just outside of town, and sometimes in my own garden. It’s all organic, even the locally produced panela (dark brown sugar). As usual, I don’t add brown sugar to mine because the bananas make it sweet enough, but most people prefer sweeter pudding.
